Rasmalai—a royal Indian dessert made of soft paneer balls soaked in creamy saffron milk. Here’s how to make it at home!

Intro

Milk (full cream),  Lemon juice (to curdle milk), Sugar, Cardamom, Nuts (pistachios, almonds), Saffron strands

Ingredients Needed 

Boil milk → Add lemon juice → Strain & wash → Get soft chhena (paneer).

Step 1 – Make Chhena 

Knead chhena until smooth & soft. Shape into small round discs.

Step 2 – Knead Dough 

Boil water + sugar. Add chhena balls & cook until they double in size.

Step 3 – Prepare Sugar Syrup  

Boil milk → Add saffron, cardamom & sugar. Let it thicken slightly.

Step 4 – Make Ras/Flavored Milk  

Soak cooked chhena balls in saffron milk. Refrigerate for a few hours.

Step 5 – Combine & Chill 

Garnish with chopped pistachios & almonds. Enjoy soft & spongy homemade Rasmalai!
