Rasmalai—a royal Indian dessert made of soft paneer balls soaked in creamy saffron milk. Here’s how to make it at home!

Milk (full cream), Lemon juice (to curdle milk), Sugar, Cardamom, Nuts (pistachios, almonds), Saffron strands

Boil milk → Add lemon juice → Strain & wash → Get soft chhena (paneer).

Knead chhena until smooth & soft. Shape into small round discs.

Boil water + sugar. Add chhena balls & cook until they double in size.

Boil milk → Add saffron, cardamom & sugar. Let it thicken slightly.

Soak cooked chhena balls in saffron milk. Refrigerate for a few hours.
