Kanji Vada Recipe

What is Kanji Vada? 

Kanji Vada is a traditional North Indian fermented drink. It is made with black carrots, mustard, and lentil vadas. Popular especially during Holi.

Ingredients for Kanji 

• 2–3 Black Carrots (sliced) • 1 tbsp Mustard Powder • 1 tsp Red Chili Powder • 1 tsp Salt (adjust to taste) • 4–5 cups Water • 1 pinch Asafoetida

Ingredients for Vada 

• 1 cup Moong Dal (soaked 4–5 hours) • Salt to taste • 1 pinch Hing • Oil for deep frying 

How to Prepare Kanji 

Boil water and let it cool. Add carrots, mustard powder, salt, chili & hing.  Pour into a glass jar. Cover and keep in sunlight for 3–4 days. Stir daily for fermentation. 

How to Make Vada 

Grind soaked moong dal into thick batter. Add salt & hing. Deep fry small vadas until golden. Soak fried vadas in warm water for 10 minutes. Squeeze gently. 

Add soaked vadas into fermented Kanji. Let them absorb the tangy flavor for few hours. Serve chilled!
